Ranch Hand's Breakfast Skillet

How to Cook Ranch Hand's Breakfast Skillet:

  1. Heat olive oil in a large skillet over medium-high heat. Add the diced potatoes, season with salt, pepper, and paprika, and cook until they’re golden brown and crispy, about 10 minutes. Remove and set aside.
  2. In the same skillet, add the beef patties, breaking them apart with a spatula. Cook until browned, then add the diced bell pepper and onion. Cook for an additional 5 minutes until the vegetables are soft.
  3. Reduce heat to medium. Return the potatoes to the skillet and mix everything together. Make four wells in the mixture and crack two eggs into each well. Cover the skillet with a lid and cook until the eggs are set to your liking.
  4. Sprinkle the shredded cheddar cheese over the top, cover again just until the cheese melts, then serve hot, right from the skillet.
