How to Cook Homestyle Western Sous Vide Dry-Aged Steaks:
- Preheat your sous vide cooker to 130°F (54°C) for medium-rare.
- Season the steaks with salt and pepper.
- Place each steak in a separate vacuum-seal bag with a sprig of rosemary and a crushed garlic clove.
- Seal the bags and place them in the sous vide water bath. Cook for 1 hour.
- After cooking, remove the steaks from the bags and pat dry.
- Heat olive oil in a skillet over high heat. Sear the steaks for about 1 minute on each side, or until a crust forms.
- Let the steaks rest for a few minutes before serving.
