Smoked Brisket Skewers under the Stars

How to Cook Smoked Brisket Skewers under the Stars:

  1. Start by soaking your skewers in water for 20 minutes if they’re of the wooden variety.
  2. In a bowl, whip up your Cowboy’s Midnight Marinade, combining all the ingredients and stirring until the sugar is fully dissolved.
  3. Bathe the Brisket pieces in a quarter of your marinade, letting them soak up the flavors overnight.
  4. Fire up the grill, aiming for a high heat to get those perfect grill marks.
  5. Skewer up your ingredients, alternating between the marinated Brisket, onion chunks, and mushrooms.
  6. Lay the skewers on the grill, giving them a good turn now and then, and letting them sizzle and char for 5 to 15 minutes, or until they’re cooked just the way you like.
  7. As they grill, baste the skewers with the leftover Cowboy’s Midnight Marinade for an extra layer of flavor and caramelization.
  8. Once they’re ready, hit them with a sprinkle of sesame seeds and a handful of sliced scallions for garnish.
  9. Serve them straight off the grill, and you’ve got yourself a cowboy feast under the stars. Enjoy!

  • 1 pound American Brisket tenderloin pieces
  • 1 yellow onion, cut into 2” pieces
  • 10 white button mushrooms
  • Cowboy’s Midnight Marinade (see recipe below)

  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 3 tablespoons sesame oil
  • 1/4 cup mirin
  • 1/2 Korean/Asian pear (or apple), grated
  • 1/2 medium onion, grated
  • 4 scallions, thinly sliced
  • 2 tablespoons minced garlic
  • 1 teaspoon minced ginger
  • ½ teaspoon black pepper
  • 2 teaspoons sesame seeds
  • 1/2 cup soy sauce
  • 1/2 cup cola (or lemon-lime) soda
