Our Rancher’s Choice Beef Bourguignon is more than just a dish—it's a celebration of our hard-working spirit, using the finest dry-aged beef from our own lands. This recipe is a western twist on the classic French stew, simmered slowly to perfection, combining the robust flavors of our ranch with a touch of rustic elegance.

Ingredients

Rancher’s Choice Beef Bourguignon Ingredients:

  • 3 lbs Lazy T Ranch ribeye or sirloin, cubed
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 6 slices thick-cut bacon, chopped
  • 1 large onion, diced
  • 4 carrots, sliced
  • 4 garlic cloves, minced
  • 1 bottle (750 ml) dry red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon fresh thyme leaves
  • 2 bay leaves
  • 1 pound fresh mushrooms, quartered
  • Salt and pepper to taste

Instructions

How to Cook Rancher’s Choice Beef Bourguignon:

  1. Prep the Beef: Toss the cubed beef with flour, salt, and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and sear until browned on all sides. Remove beef and set aside.
  2. Cook the Bacon and Veggies: In the same pot, cook the bacon until crisp. Add the onion and carrots, cooking until they begin to soften. Stir in the garlic and cook for another minute.
  3. Combine and Simmer: Return the beef to the pot. Stir in the red wine, beef broth, tomato paste, thyme, and bay leaves. Bring to a simmer, then reduce the heat to low. Cover and cook for 2-3 hours, or until the beef is tender.
  4. Add Mushrooms: In the last 30 minutes of cooking, add the mushrooms and continue to simmer. Adjust seasoning with salt and pepper as needed.
  5. Serve: Remove the bay leaves and serve your bourguignon hot from the stove, ideally with a side of creamy mashed potatoes or crusty bread to soak up the rich sauce.
