Ingredients
Rancher’s Choice Beef Bourguignon Ingredients:
- 3 lbs Lazy T Ranch ribeye or sirloin, cubed
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 6 slices thick-cut bacon, chopped
- 1 large onion, diced
- 4 carrots, sliced
- 4 garlic cloves, minced
- 1 bottle (750 ml) dry red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon fresh thyme leaves
- 2 bay leaves
- 1 pound fresh mushrooms, quartered
- Salt and pepper to taste
Instructions
How to Cook Rancher’s Choice Beef Bourguignon:
- Prep the Beef: Toss the cubed beef with flour, salt, and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and sear until browned on all sides. Remove beef and set aside.
- Cook the Bacon and Veggies: In the same pot, cook the bacon until crisp. Add the onion and carrots, cooking until they begin to soften. Stir in the garlic and cook for another minute.
- Combine and Simmer: Return the beef to the pot. Stir in the red wine, beef broth, tomato paste, thyme, and bay leaves. Bring to a simmer, then reduce the heat to low. Cover and cook for 2-3 hours, or until the beef is tender.
- Add Mushrooms: In the last 30 minutes of cooking, add the mushrooms and continue to simmer. Adjust seasoning with salt and pepper as needed.
- Serve: Remove the bay leaves and serve your bourguignon hot from the stove, ideally with a side of creamy mashed potatoes or crusty bread to soak up the rich sauce.
