- 1 chuck roast (The Chuckwagon) (~3 lbs)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 yellow onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 pre-made pie crusts (top and bottom)
- 1 egg, beaten (for crust wash)
Instructions
How to Cook Chuckwagon Roast Pot Pie:
- Prep the Roast: Preheat your oven to 325°F. Heat olive oil in a large Dutch oven over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides until browned. Remove the roast and set it aside.
- Build the Base: In the same Dutch oven, add onions, carrots, and celery. Sauté until softened. Stir in garlic and cook for another minute. Sprinkle in the flour and mix well, letting it cook for a minute or two before slowly adding the beef broth. Stir until the mixture thickens.
- Slow Cook the Roast: Add the seared chuck roast back to the pot. Cover and transfer to the oven to braise for 2 hours, or until the roast is tender and shreds easily. Remove from the oven and let it cool slightly before shredding the beef.
- Assemble the Pot Pie: Preheat your oven to 400°F. Stir the shredded beef, peas, thyme, and rosemary into the vegetable mixture. Roll out one pie crust and press it into a deep-dish pie pan. Pour the beef mixture in, then top with the second crust. Crimp the edges and cut a few slits in the top for steam to escape. Brush with beaten egg.
- Bake: Bake for 30–35 minutes, or until the crust is golden brown and flaky. Let the pot pie rest for 10 minutes before serving.
