These beef jerky nachos bring together crispy chips, melty spicy queso, and the savory punch of Lazy T Ranch jerky. Perfect for game day, family gatherings, or just a cozy night around the fire, these nachos hit the spot with that western kick you crave.

Campfire Beef Jerky Nachos with Spicy Queso Ingredients:

  • 1 bag (10 oz) Lazy T Ranch beef jerky, chopped (choose your favorite flavor)
  • 1 large bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 jalapeño, sliced
  • 1/4 cup fresh cilantro, chopped (optional)

Spicy Queso:

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup shredded pepper jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper, to taste

Instructions

How to Cook Campfire Beef Jerky Nachos with Spicy Queso:

  1. Make the Spicy Queso — In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about a minute. Gradually add the milk, stirring until the mixture thickens. Add the pepper jack and cheddar cheese, stirring until melted and smooth. Season with smoked paprika, chili powder, salt, and pepper. Set aside.
  2. Assemble the Nachos — Spread a layer of tortilla chips on a large baking sheet or oven-safe skillet. Sprinkle the chopped beef jerky and shredded cheddar cheese evenly over the chips.
  3. Bake or Broil — Place the nachos in the oven at 350°F for about 5-7 minutes, or until the cheese is melted. If you’re cooking over a campfire, cover with foil and heat until the cheese melts.
