  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons coarse salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional for a kick)
  • 1 cup BBQ sauce (your favorite homemade or store-bought)
  • 1/2 cup apple cider vinegar
  • 1/4 cup water

Instructions

How to Cook Bighorn BBQ Beef Ribs:

  1. Prep the Ribs: Start by mixing brown sugar, smoked paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper in a bowl. Rub this spice blend all over the ribs generously.
  2. Ready the Grill: Preheat your grill to a low heat of around 250°F (121°C), aiming for indirect heat. If you're using a smoker, get it to a steady smoke.
  3. Grill 'Em Slow: Place the ribs bone-side down, away from direct heat. Cover and let them cook slowly for about 5-6 hours. The goal is to cook 'em slow and low, allowing the flavors to meld and the meat to tenderize.
  4. Sauce and Serve: In the last 30 minutes of cooking, mix your BBQ sauce with apple cider vinegar and water. Baste the ribs with this mixture every 10 minutes until they're done to your liking. When finished, the meat should be tender enough to pull away from the bone with just a gentle tug.
  5. Rest and Enjoy: Let the ribs rest for about 10 minutes before serving. This allows the juices to redistribute, making every bite as flavorful as the last.
