  2. Season the Steak: Season the Sierra Steak generously with coarse sea salt and black pepper. Let it sit at room temperature for about 15 minutes.
  3. Grill the Steak: Preheat your grill to a high heat. Brush the steaks with olive oil and grill for about 5-7 minutes on each side for medium-rare. Let the steak rest for 10 minutes, then slice thinly against the grain.
  4. Assemble the Tacos: Place slices of steak on warmed corn tortillas. Top with sliced red onion, chopped cilantro, and a generous drizzle of the chimichurri sauce. Serve with lime wedges on the side.
