Flank Steak Fajita Bar: A Western Fiesta

How to Cook Flank Steak Fajita Bar:

  1. Marinate the Flank Steak: In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Place the flank steak in a shallow dish or zip-top bag, pour the marinade over it, and let it sit for at least 30 minutes (or up to 4 hours in the fridge).
  2. Cook the Flank Steak: Preheat a grill or cast-iron skillet over medium-high heat. Remove the steak from the marinade and pat dry. Grill for 4–5 minutes per side for medium-rare, or longer if desired. Let the steak rest for 5 minutes, then slice thinly against the grain.
  3. Sauté the Veggies: In the same skillet or on the grill, cook the bell peppers and onion until softened and slightly charred. Season with a pinch of salt and pepper.
  4. Set Up the Fajita Bar: Warm the tortillas and arrange them with the steak, veggies, and all your favorite toppings. Let everyone build their own fajitas for a meal that’s as fun as it is delicious!
