Cowboy Chili

How to Cook Cowboy Chili:

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat until it's no longer pink. Drain any excess fat.
  2. Add the diced onion and minced garlic to the pot with the beef, cooking until the onion is translucent.
  3. Stir in the kidney beans, diced tomatoes with their juice, tomato paste, chili powder, cumin, smoked paprika, cayenne pepper, and season with salt and pepper.
  4. Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let the chili simmer, uncovered, for about 1.5 hours. Stir occasionally, adding more broth or water if the chili gets too thick for your liking.
  5. Serve the chili hot, with optional garnishes like shredded cheese, sour cream, and chopped green onions.
