  1. Make the Spicy Queso — In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for about a minute. Gradually add the milk, stirring until the mixture thickens. Add the pepper jack and cheddar cheese, stirring until melted and smooth. Season with smoked paprika, chili powder, salt, and pepper. Set aside.
  2. Assemble the Nachos — Spread a layer of tortilla chips on a large baking sheet or oven-safe skillet. Sprinkle the chopped beef jerky and shredded cheddar cheese evenly over the chips.
  3. Bake or Broil — Place the nachos in the oven at 350°F for about 5-7 minutes, or until the cheese is melted. If you’re cooking over a campfire, cover with foil and heat until the cheese melts.
